Chipotle aims for July 7 opening in Fishkill; Five Guys looks to early August

FISHKILL - Dutchess County residents hankering for a Chipotle burrito won't have to wait much longer.

Chipotle Mexican Grill confirmed a tentative opening date of July 7 for its Fishkill location, according to assistant manager Michael Angel.

"The store is done," Angel said. "Just finishing some little things, and we are good to go on July 7."

The Five Guys Burgers and Fries set to open in the same building anticipates either a late-July or early August launch, said David Livshin, managing agent for the property owner, Dutchess Holdings.

Construction at the 4,600-square-foot space at 18 Westage Dr. in the Hudson Valley Towne Center was completed months ago. From that point, the chain restaurants were responsible for the interiors, Livshin said.

While the date is tentative, Chipotle is on track to meet its July 7 opening, spokeswoman Quinn Kelsey said.

"We’re looking forward to being a part of the community," she said.

Five Guys still has additional interior work to complete, Livshin said. The Five Guys will replace a nearby location at 703 Old Route 9.

"Five Guys will likely catch up quickly as they don't have to go through the hiring process like Chipotle," he said.

Both restaurants will feature seasonal outdoor seating, Livshin said. Neither chain will have a drive-thru.

This would be Chipotle's first restaurant in Dutchess County. The next closest one is about 31 miles north of Fishkill in Kingston.

Dutchess experienced an influx of chain restaurants opening their first locations in the county throughout 2016 and 2017, including Hardee's, Texas Roadhouse, Tilted Kilt and Popeyes Louisiana Kitchen. Golden Corral also opened in the county, but quickly closed after the corporation terminated its agreement with the franchisee.
