Burgers are back on the menu in Beacon.

Though the city lost a popular restaurant with the closure of Poppy's Burgers and Fries in March, Brian Arnoff, restaurateur and chef behind Kitchen Sink Food & Drink in Beacon, announced plans to open a new burger joint at the former Poppy's location next month.

Meyer’s Olde Dutch, named after Arnoff's great-grandfather, is expected to open in May.

LOCAL EXPANSION: Restaurateurs grow beyond single eateries in the Valley

The restaurant, located at 184 Main St, will offer Arnoff's take on the classic burger restaurant while also featuring a full-service bar. Arnoff purchased the building from Paul Yeaple, owner and chef of Poppy's.

More than just the standard beef burger, the menu will offer lamb, chicken and vegan options, as well as hand-cut fries, sweet potato fritters, salads and signature sauces.

"All of our Kitchen Sink philosophies about using local food purveyors will be applied at Meyer’s Olde Dutch, with New York state beef and cheese, and local produce — including from our family micro farm in Hyde Park," Arnoff said in a press release. "Our full-service bar will feature a large selection of New York craft beer, locally produced wine and house-crafted cocktails."

Diners can also expect both counter service and kiosk ordering, providing a fast, casual dining experience.

"It's not about fitting into a box as much as it is about trying a concept local people will respond to in a casual environment," Arnoff said.

This opening comes a year and a half after Arnoff opened Kitchen Sink, a farm-to-table restaurant with an eclectic, globally inspired menu. He joins the ranks of mid-Hudson Valley chefs to expand beyond a single area restaurant.

"Ideally, I might have wanted to wait a bit before jumping into another restaurant, but the opportunity arose and I didn't want to pass on it."

"We look forward to bringing the same passion for food that we’ve provided across the street in our fine dining establishment, but in a more casual atmosphere," Arnoff said in the release.

Though Poppy's closed last month, Yeaple said he plans to reopen somewhere in the Hudson Valley.

For fans who can't wait until May, Meyer’s Olde Dutch will start serving take-out on April 29.
